The gastronomic event Madrid Fusión Alimentos de España celebrated its XXI edition, surpassing its own limits and breaking records in terms of visitors, congress participants and journalists. Specifically, the number of visitors reached 21,106 people, 25% more than the previous year. The event, held at IFEMA Madrid, was also attended by more than 700 young students from hotel and catering schools from all over Spain, which the organization celebrates as an excellent sign for the future. The Japanese touch was given by the Sevillian pastry chef Noelia Tomoshige with her ‘Furusato’ (place of origin in Japanese), a creation that combines the Asian citrus sudachi and Andalusian chestnut honey. The jury awarded this dessert the VI Premio Pastelero Revelación, surprised by this cake of various textures, with a glazed base and bright green colors. “I am Japanese and I was born in Seville,” Noelia Tomoshige points out. “I wanted to present a novel dessert and I opted for sudachi, which I had a hard time getting here. I also wanted to represent Andalusia in some way and what goes well with sudachi is honey, chestnut honey.”
