Under the name ITAMAE, Balfegó has brought the first sushi championship in Spain for professionals oriented to the dissemination of Japanese gastronomy and culture. ITAMAE BALFEGÓ looks for the people who best represent Japanese gastronomy in Spain and that puts bluefin tuna in essence in Japanese cuisine.
The championship will take place on September 5 at the Duques de Pastrana Complex in Madrid. The contestants will compete before a jury made up of important chefs of Japanese gastronomy, both from Spain and from other countries such as Hideki Matsuisha, Ricardo Sanz, Víctor Planas and Yoshikazu Yanome.
Registration for the contest is open and will close on August 14. Then, all the selected contestants will go through a first filter of classification of their proposals and the lucky ones who pass to the next phase will be present at the celebration of the champion and the ceremone of awards ceremony on September 5. Here, the contestants present their proposals to the jury in a championship structured in two tests: nigiri skill and nigiri creation, maki and sashimi.
