Andalusian soul and Japanese face: Noelia Tomoshige’s sweet revolution sweeps Madrid

“Dream, but don’t fall asleep”. This strong message printed on the wall of the Monroebakes pastry shop, in the Madrid municipality of Getafe, seems to perfectly define its owner, Noelia Tomoshige, a Sevillian of Japanese origin. Just two years ago, she was working as a saleswoman for a luxury firm. Today, her Japanese-French pastry shop has revolutionized the Madrid gastronomic scene and has already captivated thousands of palates. In fact, her work has earned her the Pastelera Revelación award at Madrid Fusión 2023.
