The Japan-Spain Business Circle (CEJE) celebrates the international recognition of its partner Proton, protagonist of one of today’s most disruptive technological innovations: a magnetic freezing system developed in Japan that is transforming the way the world preserves food, drugs, and biological tissues.
Proton’s technology uses electromagnetic fields combined with air at –35 °C to align water molecules and prevent the formation of large ice crystals, thus preserving the original structure and properties of the products. The result: food that maintains texture, flavor, and nutritional value even after being frozen, and biological materials that retain their viability with unprecedented precision.
Proton technology is already implemented in Japan, Europe, and America. In the food sector, it allows the export of products with “freshly made” quality; in biomedicine, it is used for the cryopreservation of cells destined for advanced therapies such as those for Parkinson’s, achieving a cell viability of over 85%.
The company has a demonstration center on the Food Campus of the University of Barcelona, where European institutions and companies can experience the technology in operation.
